Have you started and new job or switched to a new project team lately? Then you may have picked up a few unwanted new pounds like me. According to a survey performed by CareerBuilder.com, 45% of employees have gained weight since starting their job. So I have starting eating a little healthier and here is on of my new recipes that I picked up after my friend threw a Pampered Chef Party. Tonight I cooked Grilled Fish Tacos to stay heathy her is my take on the recipe. Try it out and let me know how you like it.
lemon juice | |
1 | tomatoes, seeded |
1 | small onion |
1/4 | cup mayonnaise |
2 | tbsp (30 mL) milk |
1 | garlic clove, minced |
1/4 | tsp (1 mL) salt |
2 | cups (500 mL) thinly sliced lettuce green |
1 | avocado |
8 | (6-in./15-cm) corn tortillas |
1 | lb (450 g) skinless cod fillets 3 tbsp of garlic herbs and seasonings |
1/4 | tsp (1 mL) coarsely ground black pepper Pam Spray |
- Spray pan with Pam and place cod in skillet, sprinkle with seasoning and cook 6 minutes each side, until it flakes in pieces.
- For the sauce, mix light mayo, garlic and lemon juice in a bowl to put on top of fish.
- For toppings, chop up tomatoes, lettuce, onion and avocados to put on top of the tacos.
- Warm tortillas on the stove and place fish, sauce, toppings on the tortilla.
- Serve with corn salsa. Serves 4.
